For a small town, Manhattan, Kansas has some big surprises. And one of them is the Holiday Inn Hotel, with rooms built around a swimming pool and a friendly atmosphere.
The Holiday Inn is where Manhattan people often go for a special party, or a night out. A lot of them choose to eat in the bright - lit restaurant near the pool. And many of them will be served by Ellen Logan, who has worked as a waitress here for more than two years.
Ellen, like most of the waitresses, is also a student. She comes from Nebraska, but she’s planning one day to be a veterinary surgeon, and to care for small animals. But in order to support herself at college, she works twenty hours a week at the Holiday Inn.

She’s discovered something else, too. You don’t have to know much about food to be a good waitress, but you do have to know a lot about people.
“A lot of business people always stay here when they come to Manhattan,”she explains. “They like you to recognize them and remember their favorite dishes. But some couples come for a night out together. They just want to be left alone. Then there are people who can’t make up their minds. They look down the menu and say‘What do you suggest?’So I ask them how hungry they are. If they say‘Not very’, I suggest the salad bar, with soup, salad, bread, and a fruit plate. But if they say they’re very hungry, I suggest a Kansas Strip Steak, with potatoes or rice. You get salad and bread as well. It’s very nice. Real good value.”
Ellen may get tired feet sometimes, but at least she’s learning too much about people. She’ll probably make a good animal doctor, but if she finds she doesn’t like it after all, she can become a psychiatrist(心理医生)instead.

Chinese in France
An exposition(展览会)on modern living in China and an exhibition of 20th - century Chinese paintings, which opened in Paris on Monday, kicked off a year of cultural exchanges. The “China-France Culture Year”is the largest Chinese exchange of its kind with a foreign country.
The Year of China in France actually runs from October 2003 to July 2004. It will be followed by the Year of France in China, from autumn 2004 to July 2005. The two events are part of celebrations surrounding the 40th anniversary of formal diplomatic(外交)recognition between the two countries, which took place on January 27, 1964.
The activities will include expositions on“China Seen Closely - Art of Living in Modern Times”, “The Enigma of Bronze Man –– Archaeology in Sichuan”, “The Bronze Age”,“Confucianism”, and “Science and Technology of Contemporary China.”
There will also be traditional music, acrobatics(杂技), marionettes(牵线木偶), dances, garden arts and martial arts shows for the French public. And, contemporary art, photography, cinema and literature expositions will give a look at modern creators.
An exhibition of Chinese paintings of the 20th century also opened on Wednesday in Paris, displaying works of Xu Beihong and Qi Baishi.
The Chinese National Orchestra of Traditional Music and Central Ballet of China will be performing.
Next spring, Paris will have a traditional Chinese Spring Festival with a show on the Champs Elysees, the boulevard that runs through the centre of tile French capital.
Other expositions will include one on Emperor Kang Xi, a retrospective(某个时期的作品展览)of Chinese films and a week of Chinese fashion.
In July, the “Art of Dunhuang”and “week of Shanghai Culture”will conclude the activity.
