Plantain is part of the Banana family and whilst Banana's make a great raw on the go snack

Plantain needs to be cooked before eating

Plantains can be cooked in a variety of ways

but their subtle taste can be maximised by frying

First thing you need to do before frying is select the right Plantain

The skin of your Plantain should be dark yellow to brown

The ends should be black and should feel soft to the touch when you squeeze it

The darker the Plantain the more ripe it will be

Whilst you can cook with greener less ripe Plantains, your cooking time will need to be longer

The more ripe the Plantain, the sweeter it will be

Peel the Plantain and slice diagonally into half centimeter pieces

In a large pan, heat 1 to 2 tablespoons of sunflower oil at medium heat

Carefully add your plantains to the oil and fry until golden brown and tender on both sides

Cook for 4 to 6 minutes on each side
