What's going on Food Tube, it's Tim the Human here

AKA the Vegan Prince back once again, these are my vegan winter rolls

now this is a classic twist on the Vietnamese suma rolls

I'm switching up the fillings to match the season

there's lovely fruit flavours and a sweet and sour tone,

these are packed with flavour and nutrition,

this recipe serves 6

first off you wanna put a pot of water on the boil and grab your veg
首先烧一壶水，然后
taking one spring onion, one chili and some pickled ginger
拿一根葱，一个辣椒和一些腌姜，
now we're gonna make the sauce first off
现在，我们先来切辣椒
we're gonna finely shop the veg,
我们会精心挑选蔬菜，
I like heat so I'm gonna leave the seeds in my chili

but if you're sensitive to that, you might wanna cut it in half and scrape the seeds out first

my chopping technique's a little sloppy I get the job done just like you can too

finely chop it as small as you can

that's about a tablespoon of pickled ginger

it's fresh, it's colourful,

we've got four tablespoons sweet chili sauce, nice and sticky, sweetens it up

two teaspoons of sesame oil, two teaspoons of low salt soy sauce

next up juice of two limes loosen them

up so the juice is ready to come out

imagine the tang in that, lime ginger and chili

and finally one tablespoon of water

now you wanna just stir that all up mix it in together

smelling great, tastes bang on

the sauce to one side

and now we're gonna get on cooking our noodles

now you wanna boil the noodles

you want about 100 grams, two nests there,

while they're boiling we're gonna chop up some more veg

take your mixing bowl, first off one of my favourite vegetables
拿一个碗，首先是我超喜欢超爱的蔬菜之一，
real super food, kale, you want about 75 grams of that,
羽衣甘蓝，大概75克，
first off you wanna chop off the stalks
首先把茎切掉，
cos they're gonna poke through the rice paper if you leave them on,
如果不切掉的话，宣纸会被戳破的，
you can chew on them if you want,
如果你愿意的话，可以嚼一下。
you wanna get it really finely chopped cos it's gotta fit into a roll, into the bowl
得切得很细才行，因为它得卷起来，切完放进碗里，
next up let's take one carrot, peel the carrot,
接下来我们拿一个胡萝卜，去皮，
once you've peeled the carrot, you're gonna cut it into battons
然后切条，
now you've chopped up the carrot batons
好了，切好了，
your wanna check the noodles,
我们来看面条怎么样了，
mine are done now so we're gonna drain them off and put them to one side
已经煮好了，水去掉，放到一边，
you leave that to cool down while you continue with the vegetable mixing bowl
等温度冷却，这边我们继续搅拌蔬菜，
we're gonna add 50 grams of bean sprouts in they go
加入50克豆芽，
and we're gonna chop up some more ginger
再切一些姜，
another tablespoon finely sliced like before
另一汤匙的姜，做法跟之前一样，切细，
ginger's in the bowl
切完放进碗里，
take your noodles gonna pop them in too
面条也放进去，
now one of my favourite fruits, one whole pomegranate
现在该准备我最喜欢的水果之一——整个石榴
cutting down the middle, look at that, deep reds,
从中间切开，看，深红色的籽，
here's a technique I learnt from Food Tube there we go
这是我在节目里学到的技巧，
firing seeds in all directions, look at the colours look what the pomegranates done to those noodles
把石榴籽取出，看看颜色，看面条，
painted them beautifully pink great touch to these winter rolls
面条被染成漂亮的粉色，给这冬天增添了一抹浓墨的色彩，
next up I'm gonna add a couple of herbs
接下来我要加一些香草，
we've got some mint and some coriander pick about four of each
一些薄荷和一些香菜，每样各来四个，
you just want to tear the leaves off get involved nice hands on
用手把叶子撕下来，
such a different smell to everything else that's going on
这个味道有些与众不同，
just tear them up
像这样把叶子撕掉，
so they'll nice little pockets of flavour,

not too intense, not too small

next we're gonna drizzle some sesame seed oil, about a tablespoon worth

and we're gonna mix it all up, get my hands involved

bring that kale back up from the bottom

season the veg, we've got that kale

really love that kale such a great addition just to keep everything super healthy

again super healthy with the pomegranate seeds

finish mixing that through

and now we're gonna put that to one side while we start on our rice papers,

take your rice paper and dip it in a bowl of warm water for ten seconds

just so it softens up

take it out, let it dry on some kitchen roll, this is it dry, nice and sticky

and then add the filling take a handful of veg and noodles roll over the end

just like a burrito, nice chunky parcel I can't wait to try that

there we have it guys winter roll, look at the great, purple noodles in there,

you've got the kale the carrot the mint the coriander pomegranate seeds
