and today I'm going to show you how to prep squid for salt and pepper squid in Jamie's new Comfort Food book
今天我来教大家在做椒盐鱿鱼的时候怎么处理鱿鱼，这个食谱已经收进了Jamie的新作治愈美食。
Okay, the squid at the top has got a couple little wings here,
好了，鱿鱼头部有一对翅膀一样的东西，
which are fine to eat, great in things like soups and stews
这个部位口感非常好，非常适合者炖煮。
Further down is the squids head. It's got its eyes and it's got its tentacles here. Can you see?
往下是鱿鱼的头部，这是眼睛，这是鱿鱼须，看见没？
His little tentacles and he's got two long ones
有短一点的须，还有两条比较长的须。
Right in the middle, there's a beak, a little squid beak. You cut that off because it's actually a bit tough to eat.
中间这个位置是鱿鱼的嘴，鱿鱼嘴很小，这个部位要切掉，不然吃起来会很硬。
First thing we're gonna do , is grip the squid head and just pull it.
第一步，我们抓住鱿鱼的头，给它这么一拉。
With a sharp knife, I'm going to cut under the eyes
取一把锋利的菜刀，从眼睛后面切下去，
So there's the tentacles
这是鱿鱼须
Push the beak out the middle... Tentacles
去掉中间的鱿鱼嘴……剩下的就是鱿鱼须了
Where as you go, in here, there's a whole load of stuff
这是鱿鱼的身子，结结实实的鱿鱼肉
Poke your fingers up inside and here's comes the quill
把手指伸进去，把内壳拉出来
It looks like it's made of plastic.
这个内壳看着有点像塑料。
You can see why it's called a quill, because it looks like one of those old fashioned pens people used to write with.
知道它为什么叫“quill”，因为它看着有点像古时候人们写字用的那种羽毛笔。
I'm going to take the back of the knife squeeze all the other stuff out.
接下来，我们用刀背把表面的一层东西刮掉。
Pinch the wings like that and just pull them away from the body and it takes some of the skin with it, you see?
抓住翅膀，这样给它撕开，鱿鱼皮就撕下来了，看见没？
There we go
鱿鱼皮已经撕干净了。
Next step is to open it out. Push it up inside, it comes out
接下来我们要把它切开
and this is the inside of the squid head
这就是鱿鱼头内层的样子。
A small eating knife and this is just sharp enough to do the job I need it to do.
一把小小的餐刀，这把餐刀用来切鱿鱼锋利程度刚刚好。
I just drag it across the surface
我只要沿着表面一直拉就好
You see it's not cut, it's just scoured.
看见没，我们没有切头，只是给它打个花刀。
and that's all you want to do
我们要的就是这种效果。
Turn the squid around and do the same in the other direction So we get the nice cross effect
把鱿鱼翻过来，重复以上步骤，就能打出漂亮的十字花刀了。
and there... is your squid body all scoured and ready to go
好了，鱿鱼的身体部分已经处理好可以用了。
