and today I'm going to show you how to prep Lobster for two recipes in the new comfortfood book

and that is the lobster mac and cheese and Jamie's booyah base

I have here one cooked lobster, I like to tackle the claws first

and then remove the head from the body,
然后再掰虾头,
but equally you can do as it says in the book, moving your head from the body first and then tackling the claws
当然了,大家也可以按照书上的做法,先把虾头和虾尾分离开来,然后再掰虾钳。
To separate the head from the tail, hold them like that and just twist and there you go,
分离虾头和虾尾的时候,像这样握住龙虾,然后给它一掰,就好了。
The lobster mac and cheese. take the head and put it over a bowl and shake it see all that delicious flavor there?
做龙虾奶酪通信粉的时候,把头拿过来,放一个碗,然后这样摇晃,看见没,鲜美的汤汁就下来了。

now if you're making Jamie's booyah base
现在,做Jamie的的时候,
remember to keep the shells once you've cracked them to get the meat out

because you then roast them and use them to make the soup,

that makes it really delicious, so don't throw anything away at all

keep the meat and the shell separate

This is the tail, lay it on its side and then press until you hear a crack
这是虾尾,把虾尾侧立起来,然后这样按,听见裂开的声音了吗?
you see that? pull it open with your thumbs and the meat should pop out
看见没?用大拇指将虾尾掰开,虾肉就会自动弹出来。
crack the shells open and eventually you'll get to the point where you can pull the meat out
把虾壳剥掉,最后就能像这样把虾肉整个抽出来了。
now here are my claws, I'm going to break them open like that
接下来,这是龙虾的两个钳子,像这样掰成两截,
some of the meat actually just pops out
有一部分肉已经带出来了。
you'll find this little cartilage II bit here

then you poke your finger inside, there's a nice nugget of meat inside there,

The best thing to use to do that is one of these which is a crab pick or a lobster pick
要掏里面的肉最好用这种吃龙虾或螃蟹专用的挑针
but if you don't have one of these you can use the end of a teaspoon,
但如果你没有这个东西的话也可以用勺子的一端来掏
you just wink light out like that,
这样就能把肉挑出来,
all right, here's a lobster claw and it is a little bit too thick to break like that
接下来,这个是龙虾的钳子,这个钳子很硬,这样是打不开的,
so I'm going to do is get a trusty rolling pin and give it a bit of a whack

now don't hammer it because if you do you're going to crush the meat inside

and you're going to get lots of bits of shells all through the meat

there we go,

just gently pull it apart

there's your lobster-claw, okay clone number two,

now in the middle of the claw, there's actually a little piece of bone in here did you see that,

so you got to take that out

and there we go and that's your second obstacle
