Let me show you how to make a perfect sausage and radicchio risotto
今天我来给大家展示一下怎么做一道完美的香肠菊苣调味饭
so simple, so good so incredible delicious!
又简单,又好看,还好吃得不像话!
First of all: olive oil a couple of spoons
首先,来点儿橄榄油,两三勺就好
One full tablespoon of onions
一满勺洋葱
I've already chopped
洋葱我已经切好了
sweat them a little bit
稍微炒出点儿汁儿
I'm making it for about two people
我准备做一个两人份的调味饭
Here I've got five sausages...
我这里准备了五根香肠
I remove the skin.
把外面的皮去掉
we'll have two of those to use more on top of the risotto later,
之后我们要把这两根香肠放在调味饭上
then, grab the sausages,
把香肠拿在手里,
and just break them inside
用手掰成小块儿就可以下锅了
it can be any kind of sausages
随便用什么火腿都可以
keep stirring it and try to break it now
持续搅拌,把它们切碎
when they start to change this lovely colours it's ready. Lovely.
当火腿开始变成这种漂亮的颜色的时候就可以了,漂亮
You get about one beautiful radicchio
准备一个漂亮的菊苣
sweet and sour lovely-lovely flavor
甘甜,带点儿酸味儿
roughly chopped
随便切一下
the little bit of bitterness with the sweetness of the onions
菊苣稍微带点儿苦味儿,搭配洋葱的甜味
combines those well together beautiful
这两种味道搭配起来,漂亮
get about two hands full of rice
取大约两把米
it's about 170 / 200gr each of rice
每一把大约是170-200g
and this particular rice I'm using is Arborio rice
我用的这个是Arborio的大米
keep stirring it and let it toast. always use a wooden spoon
不停搅拌,把米炒一下,一定要用木勺
Don't use, no metal spoons because you will break the rice
不要用金属做的勺子,因为会把米切断
then you'll need a very, very, very good splash of wine
接下来,需要一点儿非常非常非常好的葡萄酒
about half a glass dry, sweet, doesn't matter Oh, my, my...
差不多半玻璃杯,干红或是甜葡萄酒都行,啊,我天我天……
So, once all the alcohol is evaporated
等到酒精挥发以后
and the lovely flavor of the grapes is inside
葡萄的芬芳就留在了锅里
you'll use this: a very good chicken stock.
取熬得非常好的鸡汤
Oh, yes! keep stirring it...
噢耶!不停搅拌
soon as you see that, the stock evaporate go back in again,
这个时候继续加鸡汤
with some more stock and keep stirring it...
继续加鸡汤,继续搅拌
will take toughly 20 minutes on a gentle flame of gas
文火的话要煮大约20分钟
In the meantime...those two sausages…without skin
这个时候,刚刚准备的已经去皮的两节香肠
parmesan's…half a tablespoon
帕尔玛干酪……差不多半勺
parsley…it gives that freshness
西芹,能够提鲜
you mix it!
把它们混合起来
when this one is done
混合均匀以后
put a bit of water on your hands and you roll it
将手润湿,把火腿团成丸子
You see? Your hand is clean
看见了没? 手是干净的
Just have a little bit of olive oil
锅里倒点儿橄榄油
and let this gettin' very hot one by one…
等锅烧得非常热的时候,一个一个下丸子
just put them inside!
直接放进去
And now...those're ready
现在,丸子已经好了
Look how they started to get the lovely colours
看看这漂亮的颜色
so we put them aside and let's just concentrate on risotto ...
把丸子从火上端下来,现在我们先来照顾一下调味饭
just a little bit more I don't want it too runnin'
再来点儿鸡汤,一点儿就好,我不想做得很稀
but I don't want it too dry
但我也不想做的太稠
a knob of butter, keep stirring it. get that creamin' up
一块儿黄油,不停搅拌,现在已经开始变浓稠了
give it that lovely flavor.
味道也很不错
one and a half tablespoons of parmesan cheese
再来一勺半的帕尔玛干酪
Hmmm, oh, my, my… Look at this!!!
嗯,啊,天啦天啦天啦……看看!
WHY I'M COOKING SO GOOD!!! Why?...why? why?
为什么我这么会做饭?为什么?为什么?为什么?
how can you tell if the risotto is ready?
怎么判断调味饭好了没有呢?
It is still dense…It is still a little bit crunchy
现在还有点儿浓……还有点儿硬
so, when you actually you bite it, inside the risotto is soft
所以,当你咬进去的时候,里面是软的
and last of fractions it just crack
最后的一点儿它直接就碎掉了
so, you will be chewing longer and then you'll taste it better
所以你嚼的时间会更长,品出的味道也会更好
and you will digest it better
也更好消化
But then, enough with that.
但是,我们先回来
When you've actually done the risotto
调味饭做好以后
you cover and you leave it for about 3 minutes. Oh. Yes!.
盖上盖子放三分钟左右。太棒了!
A little grate of parmesan, sausage.
再擦点儿帕尔马干酪, 放上香肠
And a little drizzle of balsamic vinegar
再淋点儿香醋
a little touch of radicchio
再来点儿菊苣
and this is the perfect Sausage Radicchio Risotto!
这就是完美的香肠菊苣调味饭!
